There's certain items in WoW Classic that you can only get once, and these are sometimes permanent, or sometimes limited in number. While questing, many people will often disgard or waste them, or go too far in a quest chain that they're lost forever. Most of them are a lot of fun, and if you PvP, they have massive value.

Bag of Marbles

An Alliance quest reward, Bag of Marbles pretty much guarantees you'll win any melee encounter with an opponent. Reducing chance to hit by 25% is huge: it can also be used on enemies (good if tanking).

Carrot on a Stick

A reward from slaying Gahz'rilla in Zul'farrak (Dungeon). Once you've killed him, and have his scale, you'll need to take it to Wizzle Brassbolts in the Shimmering Flats. The mount speed increase, while not mind-blowing, can be significant in PvP and reduces your overall travel time.

Dartol's Rod of Transformation

From a quest available in Ashenvane (Alliance only) you need to fail the final stage of the quest (after 9 steps) otherwise on turn-in, the Rod will be lost. If you cancel the quest at the final stage, you'll retain the Rod forever.

Light of Elune

Probably the strongest item here, Light of Elune makes you immune to all damage for 10 seconds. It's bonkers, and can be used by an entire party to mitigate a wipe. Grab it from the Mage Summoner in Ashenvale

Luffa

Available from a quest in Searing Gorge, Luffa is a permanent Trinket that removes a single Bleed effect. It's minor, but fun, and has some uses in PvP.

Magic Dust

Effectively a guaranteed sap in PvP, Magic Dust can be farmed from Dust Devils in Westfall. It's amazing in PvP, and as long as a DOT effect isn't active on the target, is a long sleep.

Rat Catcher's Flute

Obtained from a quest in the Deeprun Tram (Alliance), Rat Catcher's Flute plays a tune when you use it. Great for annoying other guildies when running dungeons.

Really Sticky Glue

Effectively a replacement for the Net-O-Matic (Engineering), Really Sticky Glue provides an instant root. Amazing in PvP, but limited: you'll only get a stack of 10 for turning your quest into Master Vornal in Sen'jin Village.

Skull of Impending Doom

Ridiculous because it makes a chicken sound on use, Skull of Impending Doom has its uses: great for flag running in Warsong Gulch, while it also breaks crowd control effects if it's active before they hit you. Any heals over time also mitigate much of the health loss.
